The historic center, built on the white cliffs overlooking the sea, is a tangle of streets which hide speechless views and architectural beauties. Polignano's most famous beach, Lama Monachile, is a symbol of the city and can be reached via a road that was once the bed of a stream. Every year, the beach hosts the Red Bull Cliff Diving world competition. Street food lovers cannot miss the delicious fish sandwiches, which are fish hamburgers spiced up with seasonal and local ingredients. For those who want to give themselves a luxury dinner, hidden in Polignano sea caves there is a high-level restaurant, Ristorante Grotta Palazzese, entirely carved in the rock and visible only from the sea.
